Description
Mud Crab meat has a rich, sweet, succulent and buttery flavour. The body meat is delicately flavoured, while claw meat is nutty. Cooked shells of mud crabs turn orange-red. Body meat is white, tender and flaky. Claw meat has a brownish tint, which is natural. Fresh Mud crab meat should have a mild aroma.
Cooking Tips:
Mud crab is ideal steamed or boiled and slightly salted once done and bracing in butter oil.
