Fresh Pinjalo Red Snapper (Diana) is lean and moist, with a sweetly mild but distinctive flavour. The texture is lean but moist. The superb taste of this fish is evidenced to be the best with just the slightest hint of red, masquerade in the marketplace. The semi-firm meat is pinkish, with yellow tones, in a raw state. It turns somewhat lighter when cooked.
Cooking tips:
It tastes wonderful roasted with fresh herbs and lemon juice. These fish can be seasoned, marinated, roasted, fried and sauteed
